Shipping's not that difficult to comprehend. Some people just like the idea of seeing two particular characters together for whatever reason it may be (they might like how they interact with each other, they might like how they look together aesthetically, or they might wonder how'd they interact if they haven't had much interaction in canon). It's a just for fun thing that fans do along with making fan art, fan fiction, and OCs.
A person who is new to the show can figure out more about the canon characters easily by watching the show or by reading up on the characters on a wiki page. If there's any fan art that doesn't match up to what they've seen from official sources, they'll know that whatever art they're looking at is simply fan made. It's not rocket science.

You'd be pretty wrong by implying that only older fans ship. Children and teens do it too. I've seen younger fans ship things from MLP and other series now as well.
I also did it when I was a child and a teen myself. When I was a child I shipped Jessie and James from Pokemon despite the two of them being on a just friends basis in the show. I knew they were just friends but I thought it would have been cute if they got together. And when I was a teen and was into Avatar: The Last Airbender, I'd watch from the sidelines as other teenagers would argue over whether Katara would end up with Zuko or Aang.

You bet I defended her for that. It's her art, not yours. I'd understand your complaint a bit more if you were commissioning her and she drastically changed up what you asked and paid for her to draw on purpose. But this isn't a picture you paid for. It's just a cute little innocent picture this artist made on her free time for fun to express her love for the show.
And I don't know. Maybe I don't have much of a breaking point. Hasbro, DHX, and IDW pretty much set the seeds for fans to have different interpretations for Celestia (and Luna) anyways.

Also thanks to the pictures in Twilight's book in the pilot episode, and the fact that Luna had "two":/716840?q=s1+luna%2C+screencap different "canon":/722322?q=luna%2C+animated%2C+screencap%2C+Celestia designs. People assumed the same must have applied to Celestia and applied this to their fanart as well.

And while the show's flashbacks contradicted this idea a few times in their flashbacks, the IDW comics kind of threw a bone at this idea by giving Celestia a normal mane that was mostly pink in one of their flashback issues.

So they kind of implied that it got its extra colors, sparkles, and magical movement when she got older and gained more powerful magic. This is something the show also kind of implied as well considering that Twilight's mane did something similar when Celestia, Luna, and Cadance gave her their magic.

Speaking of Twilight, because she had to earn her wings, because Cadance had to earn her horn, and because everyone (Celestia and Luna included) were so surprised that Flurry Heart was a natural born alicorn, some fans believe that Celestia and Luna might have ascended to alicornhood and had to earn wings and/or horns themselves.

So yes, there is plenty of fanart of Celestia without wings out there. I think that Celestia and Luna are natural born alicorns due to both "Word of Faust":/315900?q=word+of+faust%2C+Celestia and due to the Tale of Two Sisters book and think that them being natural born alicorns is canon.
However, since the show contradicted this and the show, books, and comics sometimes contradict each other, as far as I'm concerned fanart of them as non-alicorns is fine with me too. Plus when most fans do this sort of stuff, it's for alternate universe related stuff anyways. Not to mention, the comics gave Celestia a pegasus disguise so there's enough wiggle room for people to draw Celestia as other species beyond just an alicorn. She also has a human counterpart and due to mirror shenagins, Princess Celestia can potentionally become a human (or Principal Celestia could become a pony).
Also certain spells can cause characters to change species as well. Case in point, "Twilight turning herself and her friends into Breezies":/564268?q=screencap%2C+animated%2C+breeziefied, the Pearl of Transformation "changing the Hippogriffs and Ponies into Seaponies":/1473866?q=screencap%2C+%22seapony+%28g4%29%22, or Discord using his chaos magic to "temporarily turn Pinkie Pie into an Alicorn":/1580719?q=princess+of+chaos. With all this in mind, why does the idea of Celestia ever being different from her current canon design in fanart bother you?
If shipping, fan made alternate designs, and certain fan made human designs really bother you that much, I suggest you use the tagging system and filter them out. If you're a random passerby without an account, feel free to make one and filter out the things you don't like. It's one of the best things about this website. The tagging system allows people to filter out things they don't like as well as look up the things they do like. It's not perfect by any means, but the mods and users here try their best to keep the tags properly organized so other users can look through the images smoothly.
