I like to maintain that both Twilight and Starlight are horrible fighters on account of being scholars more than anything else. The only reason Starlight was able to keep up with Twilight was that Twilight was already terrible at fighting in the first place that their brute force magical skills kept them at a stalemate. Oh sure, they can belt out magic blasts and shields, but they lack any tactical acumen or aim. Someone like Shining Armor (I.E. someone with actual combat training) wouldn't have much issues with Pharynx, even if he isn't as good of a mage as Starlight.
