Well, it boils down to popularity, because almost anything can be a fetish.
 
I’ve seen people with fetishes for:
 
-being ironed into cloth and knitted into clothes  
-bee stings  
-sneezing  
-heartbeats  
-engorged blood veins

The reason inflation constantly gets pointed out is because it’s become so well-known.

I’m always amused when I see comments like this for inflation moments, but never for balloon moments (this episode, or even Secret of my Excess or Call of the Cutie), or crashing moments (Bridle Gossip), or eating moments (Any time Pinkie gets near any kind of pastry. Swarm of the Century, if I remember right.)
 
In any given 2 minute chunk of the show, someone’s fetish is being triggered.

As someone who does have an inflation fetish I too went “oh boy people are going to have a field day with this XD” (much like that scene in Spike At Your Service, which got put to good use in some humanized fanart) but yeah I know the show proper was just using a classic cartoon gag.
