Maybe the artist is waiting for g8 to drop and hopefully fill more of the remaining 10 types with eevees before picking which pony goes to which new eevee.
That’s good enough for me, even better considering the sisters themes with the sun and moon. These pictures were made before Sylveon came out so I wonder who they would have chosen for Sylveon. Maybe Starlight since she too didn’t exist at the time of the drawing but also has connections with magic and light like how Fairy Types do?
The artist did include Umbreon in the Pokémon version of the royal sisters, for what it’s worth.

This is the first time I’ve seen Rarity not as Glaceon. The way the artist drew this, Vappy Rarity works nicely.

I think Applejack is also a Flareon like Pinkie.
I’d have thought Glaceon would have fitted her better. Ice≈Crystals, and they also represent her elegant nature pretty well.
