Human Bright Mac and Pear Butter are alive and well. If Human Applejack were to hear about Pony Applejack’s mother and father, she’d at least want to invite the pony family over to meet them, and talk about the pony versions. (Whether or not any of them would accept is an unknown, though.)
 
No, I haven’t heard of a fic where this happens, but I can totally see this being a concept.

Being part of a defunct anti-monster agency, Bon Bon does believe that humans exists even thought she haven’t seen one, her annoyances with Lyra regarding the subject are because she’s concerned about her girlfriend best friend getting obsessed with them.

Pinkie’s parents sleep in separate beds because their neighbors made them swear an oath not to produce any more mentally unstable daughters.

On the topic of Pinkie’s parents, Cloudy Quartz had… Some odd cravings to say the least. When she was pregnant with Pinkie, she craved for sweets and rocks. When Igneous wasn’t around or looking, she would grab some gem fragments and mix them into some cotton candy.

And on the topic of strange cravings, Sunset Shimmer sometimes makes herself sick because she can’t resist the urge to snack on something she used to eat as a pony but can’t handle with her human digestive system. This was becoming less of a problem the longer she stayed in the human world, but her recent visits to Equestria have brought the cravings back in full force.

Although Torch was able to resist the molt effect, he kicked Ember out anyway because his reign resulted in him gaining enemies who would stop at nothing to crush him, but are also too weak to defeat him in battle. If he showed he cared enough about Ember to let her stay at home, she would have become a target and would have been in even graver danger. Now if his enemies were to go after his daughter in spite of her being kicked out, they’d expose their own weakness by showing they think offspring are important and dear to their parents.
 
Alternatively the ‘molt effect’ is just a test of strength and most dragons return home after passing the test (and not stinking anymore), but Smolder’s parents led her and her brother to believe that molting means you have to leave forever because they’re careless assholes. In fact, they made the term ‘molt effect’ up themselves and since it never came up again Smolder and her brother never questioned it.

Celestia and Neighsayer have an unresolved feud. The only reason why they even bond and tolerate each other in a professional way is due the fact that one is a princess and the other is a chacellor.
 
Neighsayer is still pissed at Celestia for something, who knows what it is.

In fact she’s horny

Sunset Shimmer is an indoors barefooter. Being originally an equestrian with hard hoofs instead of feet, (Let alone that equestrians not only rarely use shoes, but doesn’t wear clothes at all most of the time) she feels confortable with bare feet or socks when she’s inside her building. In fact, she might wear very little at all when she’s indoors.
 
She might as well singing and dancing on her apartment/flat wearing little more than a shirt, her panties and maybe her socks with her windows closed so no one watches her. Like that scene in Risky Business.

She’s actually wingless, and her armor contains hyper-compressed storm clouds wired to her fake horn stump, which she can still manipulate with her innate pegasus magic. Her “involuntary” sparks of anger are deliberate theatrics, but her constant bad mood is genuine since the inside of her armor is like a wet sponge that occasionally zaps her with electricity. She pretends to be a unicorn because she wants her enemies to underestimate her physical abilities.
