I prefer something academically-challenging. I don’t mind stress on the job if the stress is making me better, mostly smarter.
 
For example, I’ve done this as part of a KSP project a few days ago. Didn’t even use any of this, but it was fun to do some calculus.

Honestly, one of my biggest fears is losing the ability to do math like this and becoming stupid.

Have you considered something like medical transcription?  
From what I understand, it’s a low-pressure job that allows you to work alone, and pays decent.  
The only real skill you need is to be able to type at a decent pace.

I’ve been there. I worked in my state’s work training center making pennies an hour. They changed the laws though so that the vocational rehab work training center has to pay minimum wage.
 
I don’t really have any other way to find work. Finding work on my own is nearly impossible due to the stress and and chaotic nature of employment combined with the very competitive vocational environment we live in now. Even jobs at McDonalds and Wal Mart are hard to get if you don’t fit the criteria those companies are looking for, and as an aspie/ADHD adult with an anxiety disorder, I don’t fair well in fast-paced high-stress social situations. I have tried to find work without vocational rehab as a teacher, and that ended in disaster when I couldn’t hold a job as a substitute due to panic attacks on the job being interpreted by principals as disobedient behavior or even dangerous behavior. I once got banned from a school district doing absolutely nothing yet the school staff determined me a “danger to students,” and partly due to panicking when the vice principal was asking me questions about my behavior just as I got to work.
 
After that, I barely at all looked for work, and gave up after a major illness until late last year when I tried to apply to an autism hiring program at Microsoft (which I was rejected for because I guess I didn’t score well enough on their programming exam), and even now, I don’t have any idea if I’m “good enough” for a job in programming. I see my only solution being going to vocational rehab and getting a job through them because otherwise, I wouldn’t look for work due to lack of confidence and excessive anxiety and end up on SSI, which I won’t get until 2018.

Be careful if you try to find work through voc rehab. The way the laws are set up, places can hire disabled workers and pay them less than minimum wage.
 
It’s why I never brought up my Asperger’s in any job interviews.

It’s no excuse, trust me. I’ve actually in the process of fixing the money situation by going to vocational rehab to get a job. I go get evaluated by on the 25th I think.
