Oh, Luna’s wonder lies in her being the Princess of Paradox. She’s many things and many of them outright conflicting with each other.

I dunno, it looks more like the subtle and moderated humor of a totally grown-up and mature person for Celestia, besides all one can tell about her relationship with sweets. For luna however, there’s a lot of personnal feelings in this appreciation but one can see her trapped somewhere between childhood and adulthood, and trying to hide it (like you said about protocol), fandom’s often making her looking like this : https://www.derpiboo.ru/92952
 
Totally agreeing with stuffed animals though, I already imagined something about this. Her room full of plushies lying on the floor that maremaids have to pick up, everyday.

I don’t know what fanfic you’ve been reading, but in the show, Celestia proves repeatedly that she has a sense of humor. See “A Bird in the Hoof”, in which she pranks the Cakes, her reaction to Twilight’s invisible ink prank at the end of “Griffon the Brush-Off”, and the end of “The Best Night Ever”.
 
Luna seems much more serious, except in the IDW comics. In Luna Eclipsed, she takes everything very seriously–even the fun, as the fun seems to be the proper behavior for the situation. She strikes me as an emotionally immature pseudo-youngling in a role beyond her experience; she takes perceived insults personally, and clings to the trappings of protocol to maintain appearances.
 
Thus, I would characterize Celestia as one to sneak down the hall in fuzzy slippers and curlers to get ice cream, and Luna as one to sleep with a beat-up stuffed animal and panic and hide it if anypony comes into her room. Especially because Celestia used to tease her about it.

I think wearing squeaky animals sleepers is more a Luna thing. Celestia has always been the serious one, and no doubt her nightly activities influenced her choice for a new pair quadruplet of sleepers.
