AJ would pick Leafeon or Vapreon since they plants and water are important for farming. Actually maybe even Glaceon in order to get that frost point that plants need to stay dormant to store energy for future growth.

Anyways they are on Black and White, right now. On Monday they released an entire team except 2 a Purrloin(who stayed in the PC) and a Tympole.
 
Platinum they got a Flareon to the finals and beat Cynthia with said Flareon.
 
In Heartgold (A) from Firered shows up in place of Red. Also they somehow beat that team.

I did find several other hypothetical Eeveelution groups of other types in Google Images. The one you showed was definitely the best (mainly because they actually look like they could’ve been drawn by Ken Sugimori).

Also, for a second I couldn’t tell what types the second and third ones from the left in the top row were, but they appear to be Fighting and Poison, respectively. The rest were much easier to figure out.
