The only thing that comes to mind for me is by artist GrimmyWeirdy called “Cosmic Cosmos” where the villain from the IDW comics never stopped with her absorption of other beings and creatures, growing until she consumes the entire universe (minus a very troubled Discord and partially TFed Fluttershy.)

From the POV of the comic, it’s been like maybe a couple of hours, a day or so tops, but yeah maybe a couple years have passed in Equestria during this time, not so long for an entire new generation to develop though.
It’s really relative, because as she gets bigger, her perception of time would change too, considering that she grew to be several lightyears long, the time it would take to process information would take lightyears due to the space between neurons being so vast. however, we can see here that she is perceiving herself in Equestria at normal speed, with immediate feedback, so the limitation of light speed is disregarded entirely.
It’s magic, in other words.

This is like if that Jesus statue in Brazil comes to life and walks into the city to talk to people. That would be the most incredible and terrifying thing to see.
Also, Rainbow Dash is still alive? I imagine she just goes up to Twilight and be like “Oh hi Twilight, are you a god now?” lol

Well if she consumes everything else than the only physical space left would be inside her. When she swallows their cluster of planets then she becomes everything, but that doesn’t exactly mean everything inside her would have to be digested. She just becomes reality. The universe is pony shaped.
Besides, Twilight would grow too bored if she was everything, so she’d find a way to create stuff just so she could eat it and make the universe within her more interesting. ;)
