this also brings to mind there are in fact 2 kinds of mayo, cooked and uncooked…you can only get the uncooked kind if you make it yourself…some people swear it tastes better then the cooked stuff, never tried it myself but if you have let me know what you think.

Mayo is just eggs and oil. So a recipe that calls for both - like some cakes - can have mayo as a substitute and turn out fine.

beat me to it, yeah mayo basicly contains quite a few things that are already IN cake so….yeah…especialy if your useing ‘raw’ mayo (there are two difrent kinds of mayo, cooked and raw, most people have never had raw mayo casue you have to make it yourself, its shelf life as you might expect is very short)
