That’s probably because Soarin’ appeared a lot more in Season 1, barely appeared in Season 2, and Season 3 he’s pretty much gone. The new pictures are by people clinging to the ship and are new to art.

The oldest pictures of this ship are among the best MLP shipping pictures ever.
The newer ones are fine too but not as great as “Pink clouds” or others.
