This whole debate reminds me of the whole "decimate" thing. NO ONE uses "decimate" to mean "remove ten percent of something". Everyone uses it as a synonym for "devastate", "exterminate", "annihilate" or "destroy".
This is the same thing. Yes, TECHNICALLY, "canon" means "anything made by an official source", but nobody uses it in that context. Everyone uses it to mean "something that counts as part of the official continuity".
My point being, Texas, you are being overly pedantic, and no one likes someone who is overly pedantic.
On a related note: "Frankenstein" is a lot less of a mouthful than "Frankenstein's Monster". And if we DID want to talk about the scientist rather than the monster, we would use "Dr. Frankenstein".
