From the Sombra timeline we know that Celestia is capable of offensive and defensive spells. She produced a magic shield that reflected like a cleansing light after a short period of time.
As long as we are doing headcanons – I always had Celestia (and Alicorns in general, think of them as Archons or other magical entities with domain over a certain, very specific aspect) pinned for having just this very specific, laser focussed set of powers. She can move the sun around, mess with the celestial bodies. – That – Isn’t very useful in combat unless you plan on taking the whole goddamn planet with whatever villain is attacking you. Which is why she is so easily bested in a fight.
That, and the fact that she is a little too nice and trusting, and so she unwittingly invites the enemy in.
But still, being a TV-Y show means we can’t discuss certain things. 1000+ years of rule is a lot. I doubt she hasn’t had any attempts on her life, especially if the unicorn monarchy that preceded her rule was anything like a real medieval monarchy. If she managed to still be around, she is either immortal or – A lot hardier than a mortal, anyway.
I’ve always kind of imagined Tia to be like a bull in a china shop with her power, given that she is more or less a direct link to the sun and often takes L’s now that twi is around because of her fear of even releasing a small amount of it. I mean if we look at what information the medium has given us thus far.
We can assume she is older than 1000 years(I feel almost 2400), and in the journal of the two sisters explains that she along with luna and any other pure blood alicorn have a slower aging process than regular poners.
It’s also mentioned that alicorns are the embodiment of all 3 races and exemplify the best of each race(great strength, masterful flight, legendary magic etc.) an example celestia is able to raise the sun with virtual ease. Being able to do what took 6 other unicorns( 5 ransom’s and starswirl) I mean breaking that down we can assume that the chosen unicorns weren’t average everyday ponies, given that starswirl himself is probably the strongest unicorn in general, Tia’s magic level at that time was insane.
I hate how inconsistent this show is with it’s expanded media.

Maybe. It’s not too crazy since she’s been a monarch for a thousand years, and a diarch before then and since S1E2. But if that’s the case, why didn’t it save her when Chrysalis overpowered her, or when the Plunderseed vines kidnapped her?
…or did it?
Fun thought.
But while such security makes sense in human world, you have to wonder if it’s necessary in pony world.

Like you said, it’s largely about headcanon.
My view is, if you take away the Y rating, the metaphorical kiddy gloves, don’t be surprised if the bullets simply bounce off a passive barrier ward Celestia keeps up 24/7.
Srsly though, I consider that that blow was damped by Celestia’s own magic, or was aimed at her horn and not her body; either is evidenced by the charred tip of her horn when she’s blown back.
Plus, Y-rated show. Not like they could show a fatal injury. Nor would they kill off Celestia.
