One possible reason for why *Princess* Cadance is referred to as such rather than *Empress* Cadance could be similar to how Queen Victoria was styled and titled after the Empire of India was declared as a distinct but integrated part of the British realm, since the part of Victoria's title declaring her Queenship over the UK and Ireland holds precedence over her title as _Empress of India_, essentially making her formally recognized as Her Majesty *Queen* Victoria.
That said, it does seem pretty plausible that she's formally recognized as a princess simply so she would stand equal with the Royal Sisters, and they in turn would be equal to Cadance.
