It was stated outright that most unicorns can only do magic related to their special talent. Twilight alone can do what she does because her special talent is magic itself, giving her the unique ability to perform any spell she can learn. Celestia says her power is unprecedented. As for others? A background unicorn once couldn’t even open a jar without Rainbow Dash’s help (and then banging it against something to boot.) And Sunburst has tremendous knowledge but low power.

The idea that all unicorns can do pretty much anything with a wave of a horn is something that’s never been true, and earth ponies are not without their advantages. If a giant monster shows up, would you rather be as good at making things pretty as Rarity or as strong as Maud?
Rarity can break physics same way Pinkie does. Also, both Maud and Pinkie can do offscreen teleport.
Pies are weird and should never be taken as example.
Main characters always get some kind of power that no one else has….
Pinkie canonically breaks physics and Maud can shatter boulders with a few strikes. There’re plenty of unicorns who can’t even pull those off.
