Granny Smith apples were actually bred by Maria Ann “Granny” Smith the person when she was around 68 years old. It was a lucky accident; she threw out some crabapple waste and the first Granny Smith seedling grew in her compost pile. But she recognized it was special and tended it, and it bore its unique fruit. Its characteristics indicate it’s a special crabapple/apple hybrid, not a variety of domesticated apple.

I swear I’ve seen “Annie Smith” in secondary material like the CCG, and it seems to be the generally accepted fanon; Granny Smith is a standard apple cultivar, though, so it might have always been her name. Annabelle is my headcanon for her given name, since I reckon Ponies had more “normal”-ish names back in the old days.
