As for hanging out with a sapient species that eats meat, humans do that all the time. It’s probably a rule — either written or unwritten — that sapient creatures don’t eat creatures they can have an intelligent conversation with, and those who would break that rule are social outcasts.
This reminds me of something I read from Islamic history/legend. Once some Badawin nomads told a qadi (Islamic judge/interpreter of Quranic law) about the time they ate some mythical creatures called the Nisnas, who have the power of speech. They were hungry, but in retrospect, they wondered - was it properly Islamic to eat something that could beg you not to in proper Arabic?

Though given how little we know about Chimera society we don’t know if that particular one was an outcast or an average example of their species.
(If there even is more than one/three of them anyways.)
Pigs are also good at finding truffles.

I keep feeling that most fans of the show don’t give ponies enough credit in terms of what they can stomach. They aren’t that squeamish. As for hanging out with a sapient species that eats meat, humans do that all the time. I don’t think Spike eating meat would be an issue in the show, because the ponies would understand he wouldn’t eat his friends. In fact, I wouldn’t be surprised if they already knew he does. Like you said, it is very likely that griffins eat meat and ponies do associate with them. It wouldn’t be any different in Spike’s case.
I also don’t think the writers are actively avoiding it. Showing Spike eating meat has just never been essential to the plot, so there’s no point in making him do so. The anatomy of dragons screams “I am a predator”, so it really doesn’t need to be spelled out anyway.
