The casing for most sausages is the intestines which are not naturally square.
I’ve never liked bologna too much. Pan fried and put in a sandwich with some pickles and spicy mustard it’s ok, but not a meat I’d choose plain.
Mortadella is good, though. It’s like bologna, but with pistachios and black pepper. Good on crusty bread with muffuletta or giardiniera.
