Currently, the only bending I can think of that involved weapons was with Avatar Kyoshi’s fans, and those fans hardly count as weapons.

Kyoshi warriors used them too so i think they qualify, also both Zuko and that earth kingdom officer used weapons with bending as did Aang with his staff, and by the time of Korra metal benders tend to have some specialized rear, like the polices steel wrist cords, or the earth empires blades that act as forarm armor,
