It’s the whole squash-and-stretch-animation-with-the-irises thing that G4 ponies have going on. It gives them about the most expressive eyes of any animated cartoon characters ever drawn. I think that’s a large part of the show’s appeal; the animators can pack in a LOT of emotion in a single frame.
Compare Big Mac and Apple Bloom’s eyes here. Big Mac’s are pinpoints; there’s not much emotional range here except for utter shock/horror. Apple Bloom’s are a little larger; that allows her more emotional range, which lets us get a clue from her frown. So Big Mac appears simply terrified, while Apple Bloom is less scared but more upset.

Big Macintosh is one of those ponies who changes size quite a bit, but occasionally hes tall enough that even Applejack could do this with only a little bend of her knees. Which is adorable.
