Actually, this issue of “Slice of Life” occurs prior to the events of the show (it explains how Pinkie Pie came to live with the Cakes) so Maud likely hadn’t started her rock science studies yet.
But she probably was off somewhere indeed, maybe doing surveys in the molasses fields or something (she didn’t appear in “Pinkie Pie and the Rockin’ Ponypalooza Party” for a similar reason after all).
Off somewhere having completed her rocktorate, presumably.
(Also Slice of Life came out long before Maud became a thing.)
