Probably Yona is Rarity’s assistant, Sandbar is Yona’s husband, and the unnamed unicorn is a frequent customer.

That’s not necessarily true. Hippogriffs, mythologically speaking, are hybrids of horses and griffons, but in FiM, they’re a separate species. So unless it was stated somewhere in show canon that Kirin are hybrids, their presence does not mean anything in terms of crossbreeding.
 
Also, even if they could crossbreed, I really don’t think crossing a yak with an earth pony would create a normal unicorn.

Actually, Kirin are a cross between horses, dragons, and fish. The scales on their backs are fish scales. But they’re a chimerical creature, not a result of two species hooking up.

Adopted is possible, assuming she’s not just a customer.
 
Biological is impossible, because bovines and equines are too genetically distant to hybridize. Apparent age is irrelevant by comparison to that obstacle.
 
Magically, even with magic genetics in this world, yaks are definitely not magical and are thus too genetically distant from magical creatures in general. Unless you’re like Grogar and you take a yak and a pony and literally combine them like the monsters in Tartarus, no magic hybrid either.
