The language there wasn’t very clear. In this case, Fluttershy wouldn’t be sexually attracted to anyone, but is romantically/physically attracted to multiple genders. So she finds them attractive and wants to date them, but not have sex with anyone. Not sure what the artist’s intent for Fluttershy specifically is, but usually people use polysexual as opposed to bisexual when they mean either male or female (but not both) and nonbinary people, since if they mean both male and female they’ll usually just say bi.
