Ugh! It makes sense, but it’s not stated in canon! Why couldn’t Meriweather put a line in where she said that she was just acting tough? It would’ve made sense at the final scene!
As I said, it’s because she was on-duty.
Sure, in The Best Night Ever she was acting as the leader of the Wonderbolts, but she didn’t have to do anything big.
There was no real pressure.
However, in Wonderbolts Academy she was trying to get the best of the best for the pony equivalent of the Red Arrows/Blue Angels/Thunderbirds.
There’s a huge difference.

You guys wanna hear my headcanon? I think the writers were going to have a new character to play the Drill Sergeant Nasty, but decided that one new character is enough, and someone saw that bronies really wanted to see Spitfire again. Thus, Ctrl+F and replace with ‘Spitfire’
She acted like that the whole episode because she was on-duty the whole episode.
She’s probably more relaxed when she’s not at the academy.
